If someone described you has having one of the 20 best butts in the south, would you take that as a complement? Saucy’s Walk Up BBQ did so when Southern Living magazine gave them such an honor for their pulled pork sandwich.  When the hotel desk recommended their barbeque, a few of us went.  The Walk Up part of the name became evident upon seeing a converted half-size cargo container with grills and smokers behind the structure.  In spite of central Virginia’s summer heat and humidity Saucy’s rewarded us with their delicious barbecue.

I decide to go back on a subsequent trip. The hotel desk says that the Walk Up name is a little misleading, since they moved into their new building on the same property.  Pulling into the gravel lot, I see the old Walk Up is still there to serve take out from 11am to 7pm, but the new building seats diners at 5pm.  The staff tells me they opened the Sit Down part about two months ago.  Diners crowd all the tables, so I grab a seat at the counter.  My pork sandwich shows up quickly and it’s just as good as I remember.  I ask my waiter if they use shoulder or butt.  He points to the menu that proudly display’s Southern Living Magazine’s quote – “The South’s Best Butt.”  New digs, same Saucy’s.

Michael has no training in food preparation or service. However, to deepen his appreciation of the effort to produce and serve a fine dish, he attempts to cook at home. Sometimes he is successful. Other times he goes to In-N-Out®.
